1 pound beef tips (Sirloin Tip or Round Steak)
1 medium onion, chopped
1/2 cup flour
1 teaspoon salt
1/2 teaspoon black pepper
2-4 tablespoons oil (Olive, Vegetable, or Palm oil)
1. Chop onions. Chop beef into 1 1/2 to 2 inch strip pieces. Coat beef in flour mixture of salt, pepper, and flour. Brown beef on all sides in 1-2 tablespoons of oil in a large iron skillet. Once beef is browned, remove from pan and set aside.
2. Add onion to pan and saute until transparent in the browned flour and 1-2 more tablespoons of oil.
3. Return beef to the pan with a small amount of water to make gravy with the flour from the beef tips. Cover and simmer on low heat for 30 minutes or until beef is tender.
