by Kristin Kirkland February 02, 2017

Ingredients for this recipe:

1 pound ground beef

10 ounces frozen cubed butternut squash, thawed

1-2 cups leaf spinach

1 medium yellow onion, chopped

1/2 teaspoon garlic powder

1/4 teaspoon salt

1/8 teaspoon pepper

Chop onion and cook with the ground beef in a lightly oiled pan.  Once beef is browned, add the butternut squash and seasonings.  Cook until squash is tender.  Fold the spinach into the ground beef, stirring until it is cooked.

Enjoy your quick and nutritious stir-fry over a bowl of rice, potatoes, or toast.
